I lightly rub each fillets with olive oil then coat with the Cajun Seasoning and let sit while I am preparing the slaw and pineapple salsa letting the flavors absorb into the fish a bit. After the cabbage and salsa are finished and placed in the fridge, the fish is placed on a baking sheet and convection baked at 350 until the filets start are flaky and fall apart (about 7-10min). After the fish is in start on the Guacamole I listed below.<br />2 - For the Slaw we add a bit of Miracle Whip Light to taste and use Extra Virgin Olive Oil in stead of Canola. This gives the slaw a little more of a slaw like consistency (less runny) and gives it a little bit of an added zing. We also add a little extra honey and dashes of salt and pepper.<br />3 - For the Pineapple Salsa we like it to be a little more chunky so we add some Red Onion to the food processor when making it. We also choose to add Cholula regular hot sauce in place of the Siracha. <br />4 - We like to actually make a Guacamole instead of just slices (we make enough to have it as an appetizer too) on it so pick your favorite guac recipe and add it. We use Avaocado, Cilantro, Lime Juice, Red Onion, Diced Tomatoes, Salt and a couple dashes of your favorite hot sauce.<br /><br />Sorry for the lack of exact amounts of ingredients. We like to cook to taste so we pretty much add the ingredients until they work.
